Lamb chops seem like something you can’t make at home unless you’re an amazing cook, but that’s just not true! After you marinate them, they only take 10 minutes to cook, and you barely have to do anything!
Ingredients
- 8 lamb chops, 1 inch in thickness
- 4 tablespoons of olive oil
- 2 tablespoons of butter
- 6 cloves of garlic
- 1 tablespoon of oregano
- 1 tablespoon of rosemary
- 1 tablespoon of mint
- 1 tablespoon of parsley
- 1/2 teaspoon of black pepper
Instructions
- First, mix together all the spices and crush all the cloves of garlic. Mix those with 2 tablespoons of olive oil.
- Rub the marinade over both sides of the chops and let it sit in the fridge for 1 hour, up to 6.
- Over medium-high heat, heat up a cast iron skillet. Melt 2 tablespoons of butter and the rest of the of olive oil until it’s slightly shiny.
- Take the meat out 20-30 minutes before you cook it. Season on each side of the chops generously with salt just before you put the meat in.
- Cook each of the chops for 4-5 minutes, and while they cook, baste it with the butter and olive oil. This will make the chop cook evenly and taste even more delicious.
- Once the 8-10 minutes are up, or the inside is at 145 F — which is medium rare — take the chops out of the skillet.
- Let them rest for 5-10 minutes before serving, and enjoy!
