How To Wow Your Friends and Make a Mirror Glaze Cake

Videos of mirror glaze cakes have been going viral and for good reason. The result of using the mirror glaze technique is stunning. Amazingly, you can achieve the effect yourself from home without too much effort.

You’ll need:

  1. 20g Gelatin Powder with 120g Water
  2. 280g Liquid Glucose
  3. 300g Sugar
  4. 150g Water
  5. 200g Sweetened Condensed Milk
  6. 300g White Chocolate (cut into small, thin pieces!)
  7. Food Coloring

Instructions

  1. Add the gelatin and the water to a bowl and mix well. Next, boil the sugar, water and glucose together. You want to make sure it properly heats up. Once it reaches 100°C, take it off the heat.
  2. Add your gelatin to the heated mix and whisk well. It’s really important that you mix everything together properly to make sure the mixture is nice and smooth. Add in the condensed milk and mix some more.
  3. Next, pour your mixture over your bowl of chopped up white chocolate. Make sure the bowl you’re using is heat proof!
  4. Add the entire mixture to a jug and add your food colouring. Blend the mixture together until it is perfectly smooth. You want to use a blender and keep it on a low setting so that it doesn’t create air bubbles.
  5. Allow your mixture to cool down but stir it every now and then to stop it setting. When it reaches about 30°C, you can pour it over your cake.
