How To Use An Entire Butternut Squash

Whether you like it roasted as a side dish, or blended into a creamy soup, there is so much to do with a butternut squash. But, there are also many parts to a butternut squash that seem to get tossed away. Instead, use every part of this vegetable and don’t put anything to waste!

Skin and Pulp

If you are peeling the skin off of the squash, don’t throw it away! Save it along with the pulp inside of the squash to make a stock. All you have to do it throw it into a pot with water and any other food scraps and you have delicious and very healthful broth.

Seeds

Every kind of squash has edible seeds, so don’t throw yours away or you’ll miss out on a great snack. Just wash the seeds and leave them overnight to dry. Then, sprinkle them with salt and olive oil and bake at a low temperature, around 275 F for about 20-30 minutes or until the seeds just start to turn brown. You can snack on them for a healthy treat, put them in salads as a crunch factor, or even make your own seed butter out of them by pureeing them in a food processor!
