Barbecue season is on its way and you know what that means—it’s time to enjoy corn on the cob. But picking a sweet ear of corn with tons of flavor amongst a huge pile at the supermarket can be really overwhelming. With these tips and tricks, you can pick great corn every time.

Preparation

Make sure you only buy corn in season and don’t buy the pre-shuck packages. As soon as you take it off the stalk, corn gets starchy, so try and wait until a few hours before cooking to shuck it.

Silk

Take a look at the silk and make sure it’s not brown or black or dried or matted. Silk that looks better means the corn will be fresher and sweeter.

Husk

The husk should be bright green and not dried out, brown, or damaged. Don’t pull the husk back to look at the corn and don’t poke the kernels to see if they pop because you’re just damaging the cob.

Weight

The corn should feel heavy for its size which indicates that it’s juicy. Lighter-feeling cobs have started to go starchy and they’ll lack flavor.
