How to Make Vegetarian Carbonara

Carbonara is one of the best-loved pasta dishes that has come out of Italy. Normally made with guanciale (pork), here is an exciting vegetarian alternative that uses butternut squash and zucchini.

Ingredients:

  • 2 zucchini
  • 2 shallots
  • 1 butternut squash
  • 2 eggs
  • 2 cups of cheddar
  • 12oz tagliatelle
  • 1 cup of pasta water
  • 2 tablespoons of olive oil
  • Lots of black pepper

Instructions:

  1. Cut the butternut squash into small chunks and roast in the oven with 1 tbsp of oil and salt for 30 minutes.
  2. Chop the zucchini into circles and fry with 1 tbsp of oil until brown on both sides. Add the shallots and cook for 5 minutes on medium heat. Add a pinch of salt.
  3. Boil the tagliatelle in heavily salted water. Meanwhile, beat the eggs in a bowl and stir in the cheddar into the mix.
  4. Add the squash to the frying pan with your zucchini and shallots. Add lots of black pepper. When the pasta is cooked, add it and 1 cup of the pasta water to this mix. Stir occasionally and let most of the water boil off. Then take the pan off the heat and add your egg and cheddar mix, making sure to stir regularly. Remove from the heat and serve with extra pepper and cheddar to taste.
