How to Make Vegan Caramel

For holiday baking and beyond, there’s nothing like a drizzle of caramel to add a touch of indulgence to all kinds of homemade treats. In addition to sugar, traditional caramel is made with copious amounts of butter and cream—not exactly vegan-friendly. Fortunately, a few simple swaps are all you need to make a rich and delicious plant-based caramel that will take your desserts to the next level. 

Ingredients:

  • 1 cup coconut cream
  • 1 cup brown sugar
  • 1/4 cup vegan butter
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. In a saucepan over medium heat, combine the coconut cream, brown sugar, and vegan butter. Stir continuously until the sugar dissolves.
  2. Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer for 10-15 minutes, stirring occasionally, until the caramel thickens and becomes a rich, golden-brown color.
  3. Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt to balance the sweetness.
  4. Let the sauce cool for a few minutes before transferring it to a glass jar or container. It will continue to thicken as it cools. 
  5. Drizzle over all kinds of goodies including cupcakes, puddings, or even pancakes.
