Ingredients:
- 1 large potato or 2 medium-sized ones
- 4 eggs
- Half a white onion
- Generous amount of olive oil
- Cheese, cold-cut meat, grated tomato (optional toppings)
Instructions
- Peel, and cut the potatoes into small cubes.
- Heat a generous amount of oil in a frying pan. Once hot, carefully place potatoes in the pan and cook until soft.
- Slice the onion thinly, and add to the pan. Cook until golden brown.
- In a separate bowl, beat 4 eggs together and add a generous pinch of salt to the mixture and mix well.
- Once the potatoes have cooked through, drain the oil from the pan and place the potatoes into the egg mixture.
- Mix everything together and let sit for a couple of minutes.
- Heat ¼ cup of fresh olive oil in the pan.
- Add the egg/potato mixture to the pan and cook until the edges start to set. Carefully flip to cook fully through.
- Remove from heat and enjoy, it is optional to add grated tomatoes, meats, or cheese.
