When you fancy a grilled cheese, nothing else will do! Crunchy on the outside and melty and gooey on the inside, this recipe is for the grilled cheese of your dreams. No fancy equipment necessary – all you need is a skillet, some good bread and cheese, and a little patience, et voilà!

Ingredients:

  • 5 tablespoons butter, softened until spreadable
  • 4 slices good quality sourdough bread
  • 2 cups shredded cheddar (you can add other cheeses such as gruyere or mozzarella, according to preference)

Instructions:

  1. Spread ½ tablespoon butter on both sides of each slice of bread. Top each slice of bread with about ½ cup cheddar.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Add two slices of bread, butter side down and cheese side up. Cook for a couple of minutes until the bread is starting to turn golden and crispy and the cheese on top is starting to melt. Flip one piece of bread on top of the other to create a sandwich and continue to cook until the cheese is melted and bubbling. You may want to press down with a spatula to help it along.
  3. Wipe the skillet clean, add some more butter, and repeat for the second sandwich.
  4. Serve with a crunchy slaw and caramelized onion chutney and dig in!
