Gather Ingredients

For this dish you will need 2 tablespoons pumpkin seeds, 2 teaspoons rapeseed oil, 100g roughly chopped spinach, 1 chopped tomato, 1 crushed garlic clove, 1/2 teaspoon turmeric, 1/2 teaspoon curry powder, 4 beaten eggs, 150g smoked salmon, toast.

There are times when you make a recipe and just nail it on the head the very first time, and that is what I did with this Greek Style Scrambled Eggs on Toast! If you are big on avocado toast or basically anything on toast you will love this breakfast! It’s packed full of nutritious flavors that will make you feel like you are having breakfast at a beautiful cafe in Mykonos! Enjoy! 🍞 – In a small bowl crack 2 @chinovalleyranchers eggs. Add 1 tbsp sliced green onion, 1 tbsp chopped parsley, 2 tbsp feta cheese, 1 tsp @califiafarms almond milk, and salt & pepper. Whisk up thoroughly. – In a sauté pan add in 1/2 tbsp @kerrygoldusa butter along with 1/2 tbsp @caoliveranch olive oil. – To the sauté pan add in 1 tbsp sliced green onion, half cup of sliced @nstomatoes, 1 garlic clove minced, and 1 tsp of dried oregano. Cook for 2-3 minutes on medium heat. – Pour the egg mixture into the pan and slowly scramble the eggs until they are setting but slightly undercooked. The eggs will continue cooking from the residual heat. – Toast a piece of multigrain toast then place the scrambled eggs on top of the toast along with a little extra feta cheese and more parsley and green onion. – Serve up and enjoy! Toast Pumpkin Seeds

Toast pumpkin seeds in a saucepan over a high heat until the seeds begin to pop. Then transfer to a plate.

Prepare Garnish

Add the oil to the pan and fry the spinach, tomato and garlic for 1-2 minutes, or until the spinach has wilted. Once this is done, add the turmeric and the curry powder and mix together.

Scramble Eggs

Add eggs to the pan and scramble over a medium heat. Season with salt and pepper. If the heat’s too high, the eggs can stick to the bottom or get too dry. Gently stir the egg mix until it begins to set and take the pan off the heat before they get too dry.

Serve

Serve the egg mix on toast with the salmon. Delicious!
