How to Make Super Simple Spring Onion Noodles

This is one of those dishes that is so much more than the sum of its parts. With just a few cupboard ingredients and some fresh green onions and ginger, you’ll create a noodle dish that’s punchy, flavorful and seriously moreish. This recipe serves 4 but could just as easily serve 2 if you’re hungry…!

The whole wheat noodles are a great source of fiber and other essential nutrients, but if you fancy adding some protein, add a boiled egg or some crispy baked tofu.

Ingredients:

  • 10 large green onions, or 15 smaller ones, very finely sliced (whites and greens)
  • Thumb-size piece of fresh ginger, peeled and finely chopped
  • 5 tablespoons canola oil or other neutral-tasting oil
  • 1 tablespoon toasted sesame oil
  • 3 teaspoons soy sauce, coconut aminos or tamari
  • 2 teaspoons rice vinegar
  • 3/4 teaspoon salt
  • 4 nests of whole wheat noodles or soba noodles
  • 1 tablespoon toasted sesame seeds

Instructions:

  1. Combine the green onions, ginger, canola oil, sesame oil, soy sauce, rice vinegar and salt in a large bowl and mix well.
  2. Cook the noodles according to the package instructions and drain well.
  3. Tip the noodles into the green onion sauce and mix thoroughly until all the noodles are coated.
  4. Use tongs to serve into 4 bowls, top with the sesame seeds and enjoy!
