Shrimp Scampi is a classic Italian-American dish that’s both simple to make and bursting with flavor. It combines tender shrimp with a garlicky, buttery sauce, typically served over pasta. This dish is perfect for a quick weeknight dinner or a fancy weekend meal.
Ingredients:
- Large shrimp, peeled and deveined
- Olive oil
- Butter
- Fresh garlic, minced
- White wine or chicken broth
- Fresh lemon juice
- Salt and freshly ground black pepper
- Red pepper flakes (optional)
- Parsley, chopped
- Grated Parmesan cheese (optional)
- Your choice of pasta
Instructions:
- Begin by cleaning and preparing the shrimp: peel, devein, and pat them dry. Simultaneously cook pasta in salted water, if using.
- In a skillet, warm olive oil and butter over medium heat, then saute minced garlic until fragrant. Be careful not to burn it. Season the shrimp with salt and pepper, and cook in the skillet for 1-2 minutes per side until pink. Remove the shrimp and set aside.
- Deglaze the skillet with white wine or chicken broth, adding more butter, lemon juice, and red pepper flakes. Let it simmer to meld flavors. Return shrimp to the skillet, adding parsley, and toss.
- Combine with pasta if desired, and serve garnished with parsley, Parmesan, and a squeeze of lemon.
