How to Make Israel’s Favorite Orange Soup

A staple of Israeli cuisine, orange soup is a delicious puree vegetable soup full of orange vegetables and packed to the brim with nutrients. Best of all, it’s easy to make and doesn’t require too many ingredients. Ready to enjoy this creamy, hearty, delicious soup? Check out how to make it below.

Ingredients

  • Squash
  • Sweet potato
  • Carrots
  • Potato
  • Garlic
  • Ginger
  • Onion
  • Oil

Directions

Start by dicing your onion. Heat up a pot over medium heat and add oil. Once the oil is warm, add the diced onions and cook until caramelized, about 20 minutes. While they cook, prep your other veggies by grating your ginger and cutting the squash, sweet potato, carrots, and potato into evenly-sized cubes.

Add a few cloves of garlic to the pot, followed by the grated ginger. Stir and cook for a minute or two. Then add the rest of your cubed vegetables and mix. You’ll want your pot to be mostly full of veggies. Then add water until it just covers the vegetables.

Bring your water to a boil, cover, and simmer for about an hour or until all of the vegetables are quite soft. Next, you can blend up your soup using either an immersion blender or by putting it in a blender.
