How to Make Delicious and Simple Roasted Cabbage

When you think of roasted veggies, your mind might come up with broccoli, cauliflower, carrots, potatoes…the list can go on. There is a veggie, however, that is super underrated in terms of roasting. That vegetable is…cabbage. Yes, roasted cabbage is not only delicious, but also super easy to make! 

On its own as a side dish, or mixed into pasta and salads, roasted cabbage is super versatile. It makes for a great way to pack more nutrition into your meals. It’s loaded with Vitamin C and K, as well as many other essential vitamins and minerals. You can totally season your cabbage any way you like, meaning you can change the flavor easily to match whatever main dish you’ve prepared to go with it!

Ingredients:

  • 1 head of cabbage
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried basil

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Time to chop that cabbage! Cut your cabbage head into ½ inch slices (roughly). 
  3. Toss the cabbage on a parchment-lined baking tray. 
  4. Drizzle with olive oil and whatever seasonings you like. 
  5. Roast in the oven until the edges of the cabbage turn golden brown.
  6. Enjoy!
