There are as many ways to make chicken soup as there are to enjoy it, but this recipe focuses on using up scraps from the chicken carcass, making this bowl of soup extra tasty as well as great value.
Ingredients:
- 1 chicken carcass (and any scraps of meat left over)
- 1 chicken stock cube
- 1 teaspoon of soy sauce
- 4 noodle nests
- 3 spring onions
- 1/2 cups of frozen peas
- 2 cups of water
- 1 onion
- 1 tablespoon of oil
Instructions:
- Heat the water in a large pan and lower the chicken carcass into it. Cover and cook over medium heat for half an hour.
- Strain the liquid into a new pan, discard the carcass. Heat the liquid.
- Fry the chopped onion and spring onions in the oil until softened, then add to the liquid.
- Add the stock cube, soy sauce, peas, and noodle nests to the liquid. Cook for 5 minutes, then remove from the heat and serve
