How to Make an Irresistible Classic Shrimp Scampi

Shrimp scampi effortlessly combines the rich flavors of shrimp with the zesty freshness of lemon and garlic. This beloved dish is not only delicious but surprisingly simple to prepare, making it a perfect choice for both weeknight dinners and special occasions. Let’s dive in.

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 8 tablespoons unsalted butter
  • 4-5 cloves garlic, minced
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons freshly chopped parsley
  • Red pepper flakes (optional)
  • 8 ounces of your favorite pasta, cooked al dente

Instructions:

  1. Season shrimp with salt and pepper, then fry in olive oil over medium-high heat until pink, about 1-2 minutes per side. Set aside. 
  2. In the same pan, melt butter, add garlic, and cook until fragrant. Deglaze with white wine, and let it reduce by half. 
  3. Mix in lemon juice, zest, and more butter. 
  4. Return shrimp to the pan, tossing in the sauce for 1-2 minutes. 
  5. Season with salt, pepper, and red pepper flakes. 
  6. Remove the pan from heat and sprinkle the dish with freshly chopped parsley. Serve the shrimp scampi over a bed of freshly cooked pasta, and spoon extra sauce over the top.
