How to Make a Refreshing Mango Coconut Chia Pudding

Chia seeds are considered to be one of today’s superfoods. They are rich in iron, protein, omega-3 fatty acids and they boost digestion. They also expand when water is added, which makes them a filling and satisfying snack to have on the go.

Here is a quick and easy recipe that will allow you to enjoy these wonder seeds with a creamy and refreshing pudding. Serves 1.

Gather Ingredients

To make this pudding you simply need 200ml coconut milk, 3 tablespoons chia seeds, 1 mango, 1 tablespoon honey, vanilla powder and coconut flakes.

Mix Them Together

When you have all the ingredients ready, you should mix the chia seeds, coconut, honey and vanilla powder together in a medium-sized bowl or jar. You can also add other flavors at this point if you want to get creative with this.

Put in the Refrigerator

Once it’s mixed, cover the container and put it in the refrigerator for at least 20 minutes, stirring occasionally.

Alternatively, you could refrigerate it over night so it’s all ready for you in the morning. You can tell when it’s ready because at that point the mix will reach a pudding consistency.

Prepare the Pudding

When the pudding is ready, take it out and cut a mango into small slices. Srrange the slices on top of the pudding and sprinkle with the coconut flakes.
