How to Make a Hearty Hollandaise Sauce

Hollandaise sauce is a beautifully rich sauce that you can get really creative with. It can be used to transform egg dishes, chicken, and much more. Here’s how to make top-quality hollandaise sauce in a matter of minutes.

Ingredients:

  • 115 grams of melted butter
  • 4 egg yolks
  • 2 tablespoons of white wine vinegar
  • salt and pepper to taste
  • lemon juice

Instructions:

  1. Heating the wine vinegar in a pan on a medium heat.
  2. Let the vinegar bubble until it has reduced to about half its original volume.
  3. Remove the pan from the heat and pour in 2 tablespoons of water.
  4. Whisk in the 4 egg yolks one at a time.
  5. Put the pan back on a low heat and whisk the mixture continuously until it is thick, creamy and light.
  6. Take the pan back off the heat and whisk in the melted butter bit by bit. This will thicken the sauce up even more.
  7. Season with salt and pepper.
  8. Serve with poached eggs, toast, smoked salmon, or grilled chicken.
