Ingredients:
- 115 grams of melted butter
- 4 egg yolks
- 2 tablespoons of white wine vinegar
- salt and pepper to taste
- lemon juice
Instructions:
- Heating the wine vinegar in a pan on a medium heat.
- Let the vinegar bubble until it has reduced to about half its original volume.
- Remove the pan from the heat and pour in 2 tablespoons of water.
- Whisk in the 4 egg yolks one at a time.
- Put the pan back on a low heat and whisk the mixture continuously until it is thick, creamy and light.
- Take the pan back off the heat and whisk in the melted butter bit by bit. This will thicken the sauce up even more.
- Season with salt and pepper.
- Serve with poached eggs, toast, smoked salmon, or grilled chicken.
