How to Extract the Meat from a Lobster

Cooking and serving a lobster is one way to gain the admiration of your dinner guests. But one of the reasons cooking lobster is so highly esteemed is that it can be very difficult to prepare. There are so many bits and pieces it can be hard to know where to start. Fortunately, there are a few simple ways to extract the meat from your lobster.

Rinse the Lobster

Once the lobster is cooked, the first thing you need to do is rinse it under cold water. Pat it dry with a kitchen towel. This makes it easier for you to touch, but it also makes it easier to manipulate.

Separate the Tail and the Claws from the Body

Twist the tail sharply away from the body to detach it. Do the same with each claw. If this is more difficult, cut them off with a chef knife.

Extract Meat from the Tail

Turn the tail so that it has the shell facing downwards. Cut down the tail with kitchen scissors from the end down towards the thicker part. Pull the shell apart with your thumbs and extract the meat all in one chunk.

Extract Meat from the Claws

Crack the claws open with a lobster cracker and carefully pull the meat out.
