How to Cook Traditional English Chips (Thick Fries)

The English chip is a delicious deep-fried wedge of potato that is crispy on the outside and soft on the inside. If you can master the homemade chip, you will be able to produce a number of traditional English dishes like a pro. Here is how to make gorgeous homemade chips in under 20 minutes. Enjoy!

Ingredients:

  • 900 grams of large potatoes
  • oil for deep-frying sea salt and pepper.

Instructions:

  1. Peel the potatoes and cut them into thick chips about 1/2 an inch thick.
  2. When they’re all cut, soak them in a saucepan of cold water for 10 minutes.
  3. Drain and dry thoroughly with kitchen towels.
  4. Heat the oil up to about 320 F and gently cook the chips until soft. This should only take 2-3 minutes. Make sure they don’t brown.
  5. Drain the softened potatoes and increase the temperature of the fryer to 360 F. Pop the chips back in the fryer and leave them to turn golden brown with a crisp outside. This will take another 2-3 minutes.
  6. When they’re ready, lift them out and thoroughly drain them of oil.
  7. When they’re dry, serve on a plate with sea salt and pepper.
