The English chip is a delicious deep-fried wedge of potato that is crispy on the outside and soft on the inside. If you can master the homemade chip, you will be able to produce a number of traditional English dishes like a pro. Here is how to make gorgeous homemade chips in under 20 minutes. Enjoy!
Ingredients:
- 900 grams of large potatoes
- oil for deep-frying sea salt and pepper.
Instructions:
- Peel the potatoes and cut them into thick chips about 1/2 an inch thick.
- When they’re all cut, soak them in a saucepan of cold water for 10 minutes.
- Drain and dry thoroughly with kitchen towels.
- Heat the oil up to about 320 F and gently cook the chips until soft. This should only take 2-3 minutes. Make sure they don’t brown.
- Drain the softened potatoes and increase the temperature of the fryer to 360 F. Pop the chips back in the fryer and leave them to turn golden brown with a crisp outside. This will take another 2-3 minutes.
- When they’re ready, lift them out and thoroughly drain them of oil.
- When they’re dry, serve on a plate with sea salt and pepper.
