How to Care for a Wooden Cutting Board

Cutting boards are an essential piece of equipment in any home or professional kitchen, providing a clean, stable surface on which to chop ingredients while protecting counters from scratches and contamination. There are several types of cutting boards made with different materials, some of the most common being glass, plastic, and wood. While glass and plastic are relatively easy to maintain, wooden cutting boards require a bit more care to keep from splintering and getting moldy over time. Here’s what you need to know.

Cleaning and Drying

After each use, hand wash your cutting board with warm, soapy water, using a brush to remove any food residue. Avoid soaking it in water for extended periods, as excessive moisture can cause the wood to warp and splinter over time. After washing, pat your board thoroughly with a clean towel to remove water droplets, then place it to dry in an upright position to prevent mold growth.

Oil Application

Wood becomes prone to cracks when it gets too dry, so it’s important to regularly moisturize your cutting board by giving it a coat of beeswax or some food-safe mineral oil. Every few weeks, apply a thin, even layer of oil to a clean, dry board using a microfiber cloth, then leave it to soak in overnight. In the morning, just give it a quick wipe to buff away excess oil before using it again.

Be Gentle

High heat and harsh chemical cleaners can strip the wood of its natural oils and lead to splitting, so stick to hand washing with mild dish soaps. Never place your cutting board in the dishwasher, and keep it in a cool, dry place away from hot appliances to protect the wood from warping.
