Ingredients:
For the Cake
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
For Filling
- 2 cups mini marshmallows
For the Coating
- 2 cups chocolate chips
- 2 tablespoons coconut oil
Instructions:
- Preheat your oven to 350°F. Mix the dry ingredients in a large bowl. Add egg, milk, oil, and vanilla and blend until smooth. Stir in boiling water so that the batter is thin.
- Pour into a greased 9×13-inch pan, baking for 25-30 minutes until a toothpick comes out clean. Cool the cake, then cut into circles.
- Sandwich marshmallows between two cake pieces. Melt chocolate chips and coconut oil in the microwave, dip each sandwich in chocolate, and place on a rack to set in the fridge for 15-20 minutes.
