For the Cake

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water

For Filling

  • 2 cups mini marshmallows

For the Coating

  • 2 cups chocolate chips
  • 2 tablespoons coconut oil

  1. Preheat your oven to 350°F. Mix the dry ingredients in a large bowl. Add egg, milk, oil, and vanilla and blend until smooth. Stir in boiling water so that the batter is thin.
  2. Pour into a greased 9×13-inch pan, baking for 25-30 minutes until a toothpick comes out clean. Cool the cake, then cut into circles.
  3. Sandwich marshmallows between two cake pieces. Melt chocolate chips and coconut oil in the microwave, dip each sandwich in chocolate, and place on a rack to set in the fridge for 15-20 minutes.
  4. Enjoy your homemade Choco Pies!
