Ingredients:
- 1 bunch of fresh cilantro
- 1 bunch fresh parsley
- 4-5 cloves of garlic
- 1 small onion
- 2 green onions (scallions)
- 1 small piece of ginger (about 1 inch)
- 1 lime, juiced
- 1 tablespoon vinegar (apple cider or white vinegar)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried thyme (optional)
- 1 scotch bonnet pepper (optional, for heat)
Instructions:
- Wash the cilantro and parsley thoroughly to remove any dirt or debris. Shake off excess water and pat dry with a paper towel.
- Remove the tough stems from the cilantro and parsley, leaving the leaves intact. Discard the stems.
- Peel the garlic cloves and ginger and roughly chop them. Peel and chop the onion and green onions as well.
- In a blender or food processor, combine the cilantro, parsley, garlic, onion, green onions, lime juice, vinegar, salt, black pepper, dried thyme (if using), and scotch bonnet pepper (if desired).
- Blend the ingredients until you achieve a smooth and well-combined mixture. You may need to scrape down the sides of the blender or processor bowl to ensure all the ingredients are incorporated.
- Transfer the green seasoning to a clean glass jar or container with a tight-fitting lid.
- Store the green seasoning in the refrigerator for up to two weeks. The flavors will continue to develop over time, so feel free to let it sit for a day or two before using it.
