This simple recipe is great for those of you who don’t have a lot of spare time, and you’ll need only about 15 minutes to prepare it. It’s a nutritious, tasty combination of avocado and chicken, so it can even replace your lunch.
Ingredients
- 2 large cooked chicken breasts, shredded or chopped
- 2 large avocados, chopped into small pieces
- 1 cup corn from 1 cooked cob
- 6 oz lean bacon, cooked and chopped
- 2 tbsp dill chopped, or to taste
- ¼ cup chives or green onion, chopped
Lemon Dressing
- 3 tbsp lemon juice, freshly squeezed
- 1 tsp sea salt
- 3 tbsp extra virgin olive oil
- ⅛ tsp black pepper
Instructions
Dice the chicken breasts and put them in a big bowl, then add the chopped avocados. Add one cup of cooked corn, ¼ cup of green onion, 2 tbsp of fresh dill and chopped bacon to the mix.
All the ingredients for the dressing need to be mixed together in a small bowl. Put it all over the salad and mix well again. If you want, you can also add hard boiled eggs and tomatoes to enrich the flavor.
