Ingredients:

  • 1 cup of water
  • 1/2 cup of unsalted butter
  • 1 cup of all-purpose flour
  • 4 large eggs
  • 1 cup of grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt
  • 1 cup of shredded mozzarella cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. In a saucepan, bring water and butter to a boil over medium-high heat.
  2. Reduce the heat to low, add flour, and stir vigorously until the mixture forms a ball. Remove the saucepan from heat and let it cool for a few minutes.
  3. Add eggs one at a time, beating well after each addition, until the dough is smooth. Stir in grated Parmesan cheese, garlic powder, dried oregano, dried thyme, black pepper, and a pinch of salt. Mix until well combined.
  4. Fold in shredded mozzarella cheese until evenly distributed in the dough. Drop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each puff.
  5. Bake in the preheated oven for 15-20 minutes or until the puffs are golden brown and have puffed up. You can also garnish with chopped fresh parsley for a burst of color if you like.
