Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup of all-purpose flour
  • 2 large eggs
  • 1 cup of breadcrumbs (plain or seasoned)
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons vegetable oil or clarified butter
  • Lemon wedges, for serving
  • Optional garnish: chopped fresh parsley

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken breasts to an even thickness of about 1/4 inch. Season both sides of the chicken breasts with salt and pepper.
  2. Set up a breading station with three shallow dishes. Place the all-purpose flour in the first dish, beat the eggs in the second dish, and combine the breadcrumbs with grated Parmesan cheese in the third dish.
  3. Dredge each chicken breast in the flour, shaking off any excess. Dip the floured chicken breasts into the beaten eggs, allowing any excess egg to drip off. Finally, coat the chicken breasts in the breadcrumb mixture, pressing gently to adhere the breadcrumbs.
  4. Heat the vegetable oil or clarified butter in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts to the skillet, working in batches if necessary to avoid overcrowding the pan.
  5. Cook the chicken schnitzel for 3-4 minutes on each side, or until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C). Transfer the cooked chicken schnitzel to a paper towel-lined plate to drain any excess oil.
  6. Serve the chicken schnitzel hot, accompanied by lemon wedges for squeezing over the top. Optionally, garnish with chopped fresh parsley for added flavor and color.
