Have You Ever Made Your Own Fishcakes?

Ingredients:

  • 1 pound of white fish fillets (such as cod or haddock), cooked and flaked
  • 2 cups of mashed potatoes
  • 1/4 cup of fresh parsley
  • Zest of 1 lemon
  • 1 teaspoon Dijon mustard
  • Salt
  • Black pepper
  • 1/2 cup of breadcrumbs
  • 2 eggs
  • 2 tablespoons vegetable oil
  • Lemon wedges for serving

Instructions:

  1. In a large bowl, combine the flaked fish, mashed potatoes, chopped parsley, lemon zest, Dijon mustard, salt, and pepper. Mix until well combined. Shape the mixture into fishcakes, about 2 inches in diameter.
  2. In one shallow dish, place the breadcrumbs. In another dish, place the beaten eggs. Dip each fishcake into the beaten eggs, ensuring it is well-coated, then coat with breadcrumbs.
  3. Heat vegetable oil in a frying pan over medium heat. Fry the fishcakes for 3-4 minutes on each side or until golden brown and cooked through.
  4. Remove from the pan and place on a paper towel to absorb any excess oil. Serve the homemade fishcakes hot with lemon wedges on the side.
