Happy Skin Kitchen’s Super Green Soup is a Vegan Delight

Green foods are a key to a healthy diet, but we don’t get to see many soups in this vibrant color. If you’re desperately craving one, Elisa of Happy Skin Kitchen came up with an amazing recipe that features come of the most nutritious veggies on the market.

Her super green soup is the ultimate vegan superfood, perfect for fans of spinach, celery, and frozen peas. Potatoes give it rich and creamy flavor, without overpowering leafy greens that give this soup its striking green shade. Here’s how to make the green soup.

Ingredients:

  • 1 white onion
  • 2-3 garlic cloves
  • 1 stalk of celery
  • 1 cup of frozen peas
  • 1 medium-size potato
  • a handful of spinach
  • 1 veggie stock cube
  • 1 teaspoon of miso paste
  • 2 tablespoons of nutritional yeast
  • A dash of oil
  • Salt and pepper

Instructions:

  1. Pour some oil into a large pan, and add the chopped onion and celery once it heats up.
  2. Finely chop the onion and celery and fry them until the onion starts caramelizing, before adding minced garlic and let it cook for another minute.
  3. Add the chopped potatoes, stock cube and miso paste to the pan and mix everything together before pouring in enough boiling water to cover the mixture.
  4. Let it all cook until the potatoes are soft, for approximately 20 minutes, before adding the frozen peas, nutritional yeast, and spinach and let it cook for a few minutes.
  5. Add salt and pepper to taste and blend the soup with a hand blender until creamy and smooth before serving it.
