From mustard on watermelon to frozen honey jelly, TikTok users have given us some pretty polarizing food trends this summer, and they’re back for more. Grilled sunflower heads are taking this social media platform by storm right now, and they’re one of those viral foods that you’ll either love or hate.

Grilled sunflower heads were also trending on TikTok last summer, and they reemerged again thanks to the viral clip posted by Brian Brigantti, who runs Redleaf Ranch. He recommends using a sunflower head that’s not fully developed, with soft and light seeds.

As the video progresses, Brigantti is shown giving the sunflower head a good wash, before rubbing it with oils and spices and grilling it head face-down for about five minutes. He topped it off with green onions and Tajín seasoning and compared its taste with corn.

Brigantti is one of the people who made grilled sunflower heads go viral, but he’s not the original creator of this dish. Tomasz Skowronski, the chef who works at a restaurant called Apteka in Pittsburgh, has been credited as the mastermind behind it. He told Delish that it’s pretty common to eat whole heads of sunflower in Poland, where he grew up, and he tried to bring that tradition to the United State with this viral dish.
