Green Smoothies – A Delicious Way to Get Your Greens

If you want to add more vegetables to your diet but aren’t a fan of leafy greens, a great way to eat more is to hide them in your smoothies. Mixed with other ingredients, you won’t even know they’re there, and consuming vegetables alongside a small amount of nut butter will allow your body to receive nutrients that are only soluble in fat. This peanut butter-and-jelly-inspired smoothie is one of our favorites—we’ve suggested spinach as it’s one of the most mild-flavored greens, but any leafy vegetable will work as well. Feel free to use whatever you’ve got on hand.

Ingredients

  • 1 banana (peel and freeze first for a thicker consistency)
  • ¼ cup apple juice
  • ¼ cup water
  • 2 tablespoons natural peanut butter
  • ¼ cup frozen berries of choice
  • 1 cup fresh baby spinach
  • ½ cup ice cubes if cold smoothies are preferred

Instructions

  • Add all ingredients to a blender and blend on high until combined. If the mixture is too thick, add more water or apple juice 1 tablespoon at a time until desired consistency is reached. 
  • Pour into a tall glass with a straw and enjoy!
