Go Nuts For This Peanut-Dressed Salad

When in need of a kick or a crunch, peanuts make a dish stand out. As they pair well with sweeter foods, peanuts are an unlikely companion to many savory recipes as well. In foods seasoned with soy sauce, honey, or teriyaki sauce, peanuts can bring out the complex flavors it joins with. If you’re feeling adventurous and ready to dig in, follow this guide for a delicious salad dressed using peanut butter and teriyaki.

Ingredients

  • ½ head of cabbage, chopped (or ¼ head white cabbage, ¼ head red cabbage)
  • 3 scallions, finely sliced
  • 1 large carrot
  • ⅔ cup peanuts, peeled and halved
  • 2 ribs of celery
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh or dry ginger
  • 2 tablespoons peanut butter
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon soy sauce
  • Juice of ½ lemon
  • 1 tablespoon sesame oil

Directions

Finely cut the cabbage lengthwise, before chopping the scallions, celery, and peanuts. Using a peeler, slice the carrot into ribbons, or just chop it into halves with a knife. Coat the vegetables with sesame oil and toss. To make the dressing, mince or press the garlic and ginger before combining them with teriyaki, peanut butter, soy sauce, and lemon juice. Finally, add the dressing to the salad, and serve fresh.
