Garlic Confit is the Condiment You Didn’t Know You Needed

Confit is a method of cooking that submerges food in oil or fat, making it extra juicy and tender. Most people turn to this method to cook meat, like in carnitas or brisket. But did you know that you can also make garlic confit for a similar, tenderizing effect?

Submerging garlic cloves in oil takes away some of the bitterness and infuses the taste into the oil—leaving you with sweet garlic and garlic oil. What a perfect result! And it turns out that it’s quite simple to make.

How to Make Garlic Confit

All you have to do to achieve this delicious condiment is combine in a saucepan four heads of garlic, with the cloves peeled, one and a half cups of olive oil, herbs—we like to use thyme or rosemary—and some salt. Bring to a simmer for about 45 minutes, until the cloves are tender. Let it cool, pour into a glass jar, and store in the refrigerator.

Garlic confit is the perfect addition to just about anything. Mash the cloves into butter and spread it all over a baguette or chicken. Drizzle the oil over vegetables or in pasta. The possibilities are endless for those garlic lovers and food connoisseurs.
