Fun Ways to Use Girl Scout Cookies

It’s that time of year again! Girl Scout cookie season is officially upon us. In most areas, troops will be selling cookies from now until the end of April, so if you haven’t had a chance to grab a box (or several) yet, you’ve still got plenty of time.

This year’s lineup includes all of the old favorites as well as Raspberry Rally, a chocolate and raspberry cookie similar in texture to Thin Mints. While there’s nothing wrong with sticking to the classic combination of cookies and a glass of milk, sometimes we like to have a bit more fun with our food. Here are a few out-of-the-box ways we’ll be enjoying our Girl Scout cookies this year:

S’mores

Not to be confused with Samoas, also known as Caramel deLites, or Girl Scout S’mores, a graham cracker-flavored cookie with chocolate and marshmallow filling. We’re talking about making actual s’mores using your choice of cookie in place of graham crackers. We especially recommend trying this with Thin Mints.

Parfait

What we love about parfaits is how versatile and easy to make they are. Just crush up some cookies and layer in a jar or glass with some yogurt and fruit. Use whatever you have on hand, or try a recipe like this Strawberry Lemon Cheesecake Parfait using Lemon-Ups cookies.

Popcorn

Like kettle corn, but way better. Grab a bag of sea salt popcorn and toss it in the oven for a few minutes with some chopped-up Samoas for a chocolatey, caramelly treat. This recipe by Sprinkles & Sea Salt is one of our favorites.
