“Friends“ Star Courteney Cox Shares Her Recipe for Vegan Zucchini Leek Soup

As the cold weather sets in, it is always great to have some soup ready to warm you up. The classics like chicken soup and tomato soup will work well, but if you want to shake things up a bit, we recommend giving Courteney Cox’s vegan zucchini leek soup a try.

The Friends star recently shared the recipe for this simple and tasty soup on her social media and got foodies quite excited. We immediately had to try it, and so should you.

Ingredients:

  • 4 large zucchini
  • 1 ½ cups cashews
  • 8 cups Veggie broth
  • 2 leeks
  • Olive oil
  • Salt
  • White pepper (black fine too)
  • Chili flakes (optional)
  • Garlic cloves (3-5)

Instructions:

  1. Soak cashews in filtered water for one hour.
  2. Cover the bottom of the pot with olive oil and a generous pinch of salt and garlic cloves.
  3. Thinly slice leeks and then sauté until they soften (5-10 minutes).
  4. Slice zucchini in rounds, then add to the pot. Add more salt and a teaspoon of pepper. You can also add a pinch of chili flakes.
  5. Add 8 cups of veggie broth and soaked cashews to the zucchini and leek. Bring to a boil and then cover with a lid and bring down to a simmer for about 45 minutes.
  6. Once cooked, purée the soup using a blender.
  7. Pour in a cup or a bowl and enjoy.
