Sure, mashed potatoes might hold the title of being your favorite side dish. But that will change once you try mashed cauliflower. This side dish is a healthier alternative to mashed potatoes or a way to break the routine and add something new to your meals. Here’s how to make them.
Ingredients:
- 1 cauliflower head
- 1 garlic clove
- 2 tablespoon shredded parmesan
- 1 tablespoon cream cheese
- 1 tablespoon olive oil
- salt and pepper
Instructions:
- Wash the cauliflower, remove the leaves, and put it in a pot of boiling water. Boil until it is soft when you pierce through it with a fork. It usually takes 5 to 10 minutes.
- Heat the olive oil in a pan and then sauté garlic for about a minute. Remove the pan from the stove.
- Take half of the cooked cauliflower head and put it in a blender. Blend at a maximum speed until you get a smooth consistency. At this point, start adding the other half in smaller batches and continue blending.
- Add the sautéed garlic, shredded parmesan, and cream cheese. Salt and pepper to taste.
