Fast Grilled Ratatouille Recipe For A Healthy Lunch

A grilled ratatouille is one of the easiest healthy lunch ideas you can prepare for the whole family.

Ingredients

The ingredients are 2 small sweet potatoes, 1 medium zucchini, 5 roma tomatoes, 2 medium yellow squash, 1 tablespoon roasted garlic seasoning, 4 cups marinara, 2 tablespoons fresh basil and 2 tablespoons olive oil. The zucchini, tomatoes, sweet potatoes and yellow squash have to be sliced into thin rounds.

Instructions

Once you’ve cut the vegetables, you should get a large skillet. Pour the marinara sauce first and even it out on the bottom with a spoon. Start placing the round slices of vegetables in a circular pattern. There will be several circles and the pieces should overlap. They will cover the marinara sauce located on the bottom. The second circle that you start should have an opposite direction. If there are empty spots fill them with more vegetables. Top everything off with some garlic seasoning and olive oil. Close the skillet with a lid and cook it on 225 F degrees for two hours in a grill with an indirect method. Once that time is done you can transfer to direct heat for 30 more minutes. Top the grilled ratatouille with basil and it’s ready to be served.
