When it comes to fall foods, the first ingredient that comes to most peoples’ minds is pumpkin. While it’s true that pumpkins are in season during fall, and we’ve got nothing against pumpkin as a flavor, (Have you tried Trader Joe’s Pumpkin Brioche Twist Bread?!) there are other seasonal gourds that we feel are just as worthy of being made into novelty products, but, for some reason, receive a fraction of the attention that pumpkin does. In effort to provide them with some time in the spotlight, we’ve rounded up some of our favorite seasonal squash recipes that we recommend for you to try this fall.

Vegan Butternut Squash Mac & Cheese

This recipe is a vegan-ified dupe of another popular Trader Joe’s fall product, but in our opinion, it’s even better. It can be made with store bought butternut squash soup or fresh puree and is super rich and creamy despite being 100% dairy-free.

Roasted Acorn Squash Flatbread

Sweet and nutty acorn squash is complemented by creamy goat cheese on this savory fall flatbread that you won’t be able to stop making. Topped with a light and flavorful basil vinaigrette, you can think of this flatbread like a pizza, all grown up.

Jalapeno Popper Spaghetti Squash

Sure, you could probably make anything taste great by loading it up with cheese and bacon, but this spaghetti squash recipe is so easy and delicious we had to include it. It’s also somewhat customizable if you prefer to add other vegetables or make it without the bacon.
