Endive is not a typical ingredient in most kitchens. The leafy vegetable has a slightly bitter taste that isn’t for everyone, but it wins major points for versatility. Endive works both raw and cooked, so you can take total advantage of this member of the chicory family. 

Endive and Apple Salad

Endive leaves are so crisp that they are naturally excellent in salads. Combine them with sliced apples, blue cheese, walnuts, and a lemon-based vinaigrette. You can also do variations of this salad with pear, goat’s cheese, and almonds.

Balsamic Grilled Endive

If you’re not a fan of endive’s bitter edge, cooking it can help mellow it out and give it a slightly sweeter flavor. Grilling the veggie can also give it a smoky element. Drizzle the endive with olive oil, season with salt and pepper, and grill or roast in the oven until tender. Once done, drizzle with balsamic vinegar.

Endive Appetizer

Make a mixture of ricotta cheese, fresh chopped herbs like parsley and dill, lemon zest, salt, and pepper. When combined, stuff the mixture into an endive leaf and wrap it closed. Then, cover the wrap with strips of prosciutto.
