Ever Tried Sunflower Seed Cream Cheese with Spinach?

Sunflower seeds are full of quality nutrients. They’re rich in protein and have a high content of healthy fats while containing multiple vitamins (Vitamin E, Vitamin B1) and minerals (Iron, Zinc, Selenium). Studies have shown that sunflower seeds boost the immune system while also helping to reduce inflammation and having a positive effect on heart health.

There are many ways to eat sunflower seeds and exploit these benefits, but our favorite one is making sunflower seed cream cheese with spinach. It’s tasty, packed with healthy nutrients, and goes well with crackers, salads, and sandwiches. Here’s how you make it.

Ingredients

  • 1 cup sunflower seeds
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons of nutritional yeast
  • 1 teaspoon Himalayan salt
  • 8 spinach leaves

Instructions

1. Soak the sunflower seeds into a bowl of water. Let them sit for an hour.

2. Rinse the seeds under a stream of water and drain.

3. Add sunflower seeds, olive oil, lemon juice, yeast, salt, and spinach into a blender.

4. Blend until your ingredients form a cream cheese consistency. In case you have some difficulties with blending, add few tablespoons of water.

5. You can dig into the cream cheese immediately, or you can put it into a plastic container and pop it into the fridge for few hours to cool down. Either way, it’ll be great on a piece of whole wheat bread.
