Falafel is a magical Middle Eastern dish that is crunchy, fried, and super delicious. While it’s not always the healthiest choice, you can make a version that is just as delicious, but a lot healthier for you!
This edamame falafel is full of protein from the soybeans, nice and crispy, and perfect for salads, pitas, or just dipped in hummus.
Ingredients
- 2 cloves of garlic
- 2 scallions
- 1/2 cup of parsley
- 1 pound of shelled edamame
- 3 tablespoons of flour
- 1 teaspoon of coriander and cumin
- 1/4 teaspoon of baking powder
- 1 teaspoon of salt
- 2 tablespoons of fresh lemon juice
Instructions
- Start by defrosting the edamame. You can do this by boiling them or microwaving them in water.
- Put them in a food processor along with the garlic, scallions, and parsley, as they will need more time to get processed.
- When they are broken down, add in the rest of the ingredients and blend until the mixture is well incorporated.
- Line a baking sheet with parchment paper and use a kitchen scoop to plop down each falafel.
- Drizzle over olive oil and bake in the oven at 400 F for 15 minutes. Then, flip them and bake them for about 10 more minutes but move the rack to be closer to the grill so they can brown more.
