For a protein-packed meal with just a few ingredients, be sure to try this tofu scramble recipe. Scrambled tofu is a great egg substitute for anyone looking to eat fewer animal products or just to mix up their breakfast routine. On its own, tofu has virtually no flavor which makes it a great canvas for whatever tastes you may be craving. In this recipe, we feature turmeric for color and cumin for a southwest kick. You can certainly play around and add whatever vegetables you enjoy as well.
Ingredients:
- One 8oz. block of firm tofu
- 1½ tablespoons of olive oil
- ½ of a medium white onion, chopped into ½ inch pieces
- 1 red bell pepper, chopped into ½ inch pieces
- ½ teaspoon of turmeric
- ½ teaspoon of smoked paprika
- ½ teaspoon of ground cumin
- Salt and pepper, to taste
Instructions:
- With clean hands, remove tofu from package and crumble the block into bite-sized pieces in a medium bowl
- Sprinkle turmeric, paprika, and cumin over tofu, and use your hands or a spoon to evenly coat
- Heat olive oil in a medium pan over medium-high heat
- Add onion and bell pepper and saute until peppers are soft and onions are translucent, about 5-7 minutes
- Add tofu to pan and heat for 4-5 more minutes, stirring often
- Remove from pan and serve! We recommend this dish alongside roasted potatoes or home fries.
