Delicious Italian Meatballs and Courgette Tagliatelle

This tasty and quirky dish is packed full of flavor without the carbs, and can be made in under 30 minutes. Just follow these simple steps, and you’ll have yourself a favorite party piece for guests and family alike.

Ingredients

For the meatballs, you will need 9oz lean beef mince, 1 finely chopped onion, 1 teaspoon mixed dry herbs, cooking oil spray, 1 crushed garlic clove, 8oz chopped tomatoes, 2 tablespoons of fresh basil.

For the courgette tagliatelle, you will need 2 trimmed and deseeded medium courgette (zucchini), sea salt and freshly ground black pepper.

Form Meat Balls

Place the mince, half the onion, half the mixed herbs and a pinch of salt and pepper into a bowl. Mixing well, form into 10 small balls.

Cook Meatballs

Heat a little olive oil in a medium-sized frying pan and cook the meatballs for around 5-7 minutes, turning occasionally. When they are browned on all sides, transfer them to a plate.

Make Sauce

Add the remaining onion to the pan and cook over a low heat for around 3 minutes. Add garlic and cook for a few seconds. Next, stir in the tomatoes, 300ml water, the rest of the herbs and shredded basil. Stir as you bring to the boil. Return meatballs to the pan, reduce heat to a simmer and cook for 20 minutes. Stir occasionally until the sauce is thick and the meatballs are cooked throughout.

Courgette Tagliatelle

Peel the courgettes into ribbons and cook in boiling water for 1 minute. Drain, mix with the meatballs and serve.
