Delicious Dairy-Free Sweet Potato Bread

Sweet potato bread is a little less well-known than banana or pumpkin bread, but it is just as delicious. It’s a cozy fall-appropriate flavor packed into a moist, cakey bread to which you can add nuts or even chocolate chips if you like. This is a great baked good to bring to seasonal gatherings or to make for yourself to eat for snacks and breakfast. It also happens to be naturally dairy-free and can be made extra healthy with whole wheat flour depending on your needs.

Ingredients:

  • 1 large sweet potato, cooked and mashed, or about 1 cup of puree
  • 1/2 cup honey
  • 2 eggs
  • 1/3 cup oil
  • 2 eggs, beaten
  • 1/4 cup hot water
  • 1 3/4 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoon pumpkin pie spice, or a large pinch each of cloves, nutmeg, allspice, ginger, and cardamom
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup hot water
  • 1/2 cup chopped walnuts and/or chocolate chips (optional)

Instructions:

  1. Cream oil and honey in a large bowl, then beat in the eggs one at a time.
  2. Next, stir in the sweet potato until well combined.
  3. Finally, sift together dry ingredients and add and combine them little by little, alternating with hot water.
  4. Pour into a loaf tin and bake at 325 F for 40-60 minutes, or until a toothpick inserted comes out clean.
