There are some classic bacon dishes, such as BLTs or bacon and eggs, but this tasty and versatile meat can be used in a variety of ways to bring flavor, texture, and interest to your cooking. Check out these three recipes that use bacon in new and exciting ways.
Bacon Lasagne
Ingredients (to serve 4):
- ¾ cup of dried lasagne sheets
- 4 slices of back bacon
- 1 tin of tomatoes
- 1 cup of minced pork or beef
- 1 onion
- 1 leek
- 2 tablespoons of oil
- Salt and pepper
- 1 cup of bechamel sauce
Instructions:
- Over medium heat, warm the oil and then add the chopped leek and onion to the pan. Fry for about 10 minutes, until beginning to brown.
- Add the minced meat and the bacon, and cook through.
- Add the tomatoes, salt, and pepper, and cook through for 10 minutes.
- Layer the lasagne sheets with the tomato and meat sauce and the bechamel sauce.
- Top with grated cheese, if liked, and bake in an oven heated to 350°F for 40 minutes.
Bacon and Pumpkin Bake
Ingredients (to serve 4):
- 6 slices of bacon
- 1 small pumpkin, peeled and deseeded
- 1 red onion
- 1 leek
- 1/2 cup of white beans
- 2 tablespoons of oil
Instructions:
- Slice the pumpkin into small chunks and roast in an oven heated to 350°F for 45 minutes, until soft.
- Heat oil in a pan and fry the sliced onion and leek for 10 minutes, until soft.
- Add the bacon to the pan, and fry for 5 minutes.
- Mix the bacon, leek, and onion with the pumpkin and the beans, place on a roasting tray, and bake for 15 minutes.
Bacon and Chickpea Stew
Ingredients (to serve 4):
- 8 slices of bacon
- 1 cup of cooked chickpeas
- 1 onion
- 1 leek
- 1 cup of tinned tomatoes
- Oil
Instructions:
- Slice the onion and leek and fry in oil until softened.
- Add the bacon and chickpeas to the pan and cook for 10 minutes.
- Add the tomatoes to the pan, reduce the heat, and simmer for 20 minutes.
- Serve with crusty bread and a salad.
