Delicious and Quick Red Lentil Soup

Lentil soup is an easy, tasty, and simple dish that can be a complete meal in itself. You can incorporate this quick recipe into your weekly meal planning, and enjoy the high nutritional value that lentils contain in a satisfying and low-calorie soup. We suggest pairing the soup with thick slices of rustic bread and adding some fresh lemon juice to the soup.

Ingredients:

  • 2 cups red lentils
  • 6 tablespoons oil
  • 5-4 cloves garlic, crushed
  • Salt and black pepper to taste
  • 1/2 teaspoon cumin
  • 1 coarsely chopped onion

Instructions:

  1. Put 3 tablespoons of the oil in a pot, add the garlic, and stir-fry for about a minute on medium flame, until it softens.
  2. Add the lentils and 6 cups of water and bring to a boil, season with salt, pepper, and cumin, lower the flame, cover the pot and cook for 20 minutes until the lentils are soft and crumbly (if the soup is too thick, add some more boiling water).
  3. Meanwhile, heat well the remaining 3 tablespoons of oil in the pan. Add the onion and stir-fry until it starts to turn golden. Add the onion to the prepared soup, along with the oil left in the pan.
