Dark vs. Milk vs. White Chocolate: What’s the Difference?

Different people like different types of chocolate. Some like dark chocolate, others indulge in milk chocolate, while some prefer white chocolate. No matter which one you prefer, chances are you’ve probably tried all three types at some point in your life. But did you ever wonder what’s the difference between them?

Ingredients

The main difference, of course, is in the ingredients. Dark chocolate should only contain cocoa powder, cocoa butter, and sugar. Some other flavor enhancers like vanilla can be present. On the other hand, milk chocolate is made out of cocoa powder, cocoa butter, sugar, and milk.

Finally, white chocolate doesn’t contain any cocoa powder. Instead, it has cocoa butter, sugar, and milk. Some manufacturers, however, use cocoa butter substitutes like vegetable oil, in which case white chocolate isn’t chocolate anymore.

Taste and Texture

Different ingredients cause these three types of chocolate to have a different taste. The absence of milk and higher cocoa percentage causes dark chocolate to have a slightly bitter taste and firm texture. Thanks to less cocoa and the addition of dairy, milk chocolate has a creamy texture and less bitterness, while white chocolate is the sweetest of the bunch.

Nutritional Value

The nutritional value of all three chocolate types is usually in the same ballpark. However, due to added milk and sugar, white chocolate has more calories. On the other hand, dark chocolate is considered the healthiest due to cocoa’s antioxidant benefits.
