“Cup-Cookies” are a Cross Between a Skillet Cookie and Cupcakes

Do you love your cookies dense and chewy? Do you ever feel like you need help making your cookies a uniform size? Do you love a good skillet cookie but want better portion control? Then these “cup-cookies” are for you! They are pretty much exactly as they sound—cookies baked in a muffin tin. Here’s how to make them.

You can use pretty much any cookie recipe you like. Particularly good are chocolate chip for nice density, or a funfetti sugar cookie recipe if you wish to go a more “cupcakey” route. This recipe will work just as well with a cookie bar, cookie cake, and skillet cookie recipes. If you’d like to make them cakeier and less dense, try adding an extra egg white to the dough.

Now comes the baking! Simply press some dough into each cup in the tray so that each is about two-thirds of the way full. Since these are cookies and not cake, they won’t rise much so you don’t need to worry if one is too full. The cookies will keep their shape and won’t spread the way some recipes do in the oven either. You’ll bake the cookies for around 15 minutes, give or take—keep an eye and take them out when they seem crusty and golden brown on the surface. Top with frosting or glaze if you like!
