Leftovers can be a blessing and a curse. On the one hand, it’s great not to have to cook a new meal every time you get hungry. On the other hand, eating the same thing over and over can get boring. If you’re looking for a way to make your leftovers more interesting, here are a few ideas. 

Leftover Pasta to Frittata

Whisk together eggs and pour them over the leftover pasta. Add a few additional ingredients like chopped vegetables, cheese, or cooked meats. Cook on the stovetop until the edges start to set, then transfer the pan to the oven to finish cooking. The result? A savory, hearty frittata. 

Roast Chicken to Tacos

Shred the leftover chicken and saute it with taco seasoning or spices of your choice. Fill taco shells or tortillas with the seasoned chicken and add your favorite toppings like salsa, guacamole, shredded cheese, and fresh cilantro. An easy taco dinner just like that. 

Mashed Potatoes to Croquettes

Transform leftover mashed potatoes into crispy, golden croquettes. Mix the mashed potatoes with shredded cheese and chopped herbs to form patties. Dip each patty in beaten egg and coat with breadcrumbs before frying until golden brown. These savory croquettes make a fantastic appetizer or side dish.
