This tasty soup isn’t difficult at all to prepare, and here’s how to make it in the comfort of your own kitchen!

Ingredients

  • 2 large zucchinis
  • 2 cups vegetable broth
  • ¾ cup whole milk
  • ½ cup water
  • 1 large yellow onion
  • 2 cloves garlic
  • ¼ cup grated parmesan cheese
  • 1 tablespoon olive oil

Instructions

Take a large saucepan and heat your olive oil along with the minced garlic cloves and chopped onion. Allow to cook for three to four minutes, or until slightly browned.

Next, add the sliced zucchini, vegetable broth, whole milk, water, and parmesan cheese and cover. Simmer on medium-low heat for around 20 minutes, or until you can see that your zucchini is mushy and fully cooked.

Pour the contents of the pan into a blender and blend on high for around 1 minute. Be sure not to put in the mixture while it’s boiling hot, as it could make the blender top fly off and create a huge mess in your kitchen! Serve hot and enjoy!
