Cottage Cheese Pancakes are the Best Way to Begin the Day

Cottage cheese is a go-to in salads and sandwiches, but the creamy ingredient can pull its weight in the sweet department, too. These cottage cheese pancakes are an excellent way to get some protein in the morning while still feeling like you’re having a treat. Isn’t that the best way to start the day?

Ingredients:

  • 1 ½ cups cottage cheese
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 cup flour
  • ¼ cup canola oil

Instructions:

  1. Add the cottage cheese to a mixing bowl followed by the eggs, vanilla, sugar, baking powder, and flour. Be sure to mix the batter between adding each ingredient. 
  2. Pre-heat a skillet with canola oil on medium-heat.
  3. Place a spoonful of the batter on the skillet and fry on each side until golden brown. 
  4. Serve warm with honey or maple syrup.
