Cooling Summer Lunches to Try

It’s getting hot out and heavy food that will make you feel satisfied and full while also being refreshed can be hard to find. Luckily, you’ve got options! If you’re looking for nice, refreshing meals for the summer months that will also help you feel full! Plus, most of them are pretty easy to make.

Gaspacho

Gaspacho is a cold soup or drink commonly served in Spain and Portugal. It’s made of blended-up raw vegetables, olive oil, and thickened with bread crumbs. It’s a great dish for summer because it’s cold and refreshing, plus thanks to the veggies, oil, and breadcrumbs it’s got enough weight and nutrients to be fairly satisfying.

Watermelon and Feta Salad

Few things are more refreshing than some sweet, cold watermelon. To complement the sweetness, feta is often put on top. Put these into a salad with some crunchy, watery iceberg lettuce, some nuts, and whatever else you like for an ultra-cooling lunch!

Cold Soba Noodles

A delicious, refreshing dish eaten in Japan, these soba noodles are chewy and eaten with a sauce called tsuyu. The sauce is easily whipped up with mirin, soy sauce, sake, kelp, and some bonito flakes. Top it with seaweed and sesame oil!
